Roast Cauliflower Recipe With Roasted Garlic

There are many options for roast cauliflower recipes, this one uses the deliciously sweet flavour of roasted garlic and fresh basil to lend a somewhat sophisticated air to an otherwise fairly bland and boring vegetable. Using different coloured caulis also adds to the visual interest.

Roast Cauliflower Recipe - Nutritional Info

The addition of garlic to this recipe means that you're getting an extra hit of antioxidants, and the reputed blood pressure lowering qualities of garlic along with the immune boosting properties it possesses.

As you may have gathered, we are BIG fans of cauliflower because it is so very good for you.

From the Cruciferous vegetable family, cauliflowers are incredibly good for us being packed with vitamin C and other goodies; plus they are known to have several anti cancer properties as well as being good for heart health.

Cruciferous vegetables contain goitrogens which can interfere with thyroid hormone production, so there is some debate as to the wisdom of eating them raw. My personal opinion on the raw vs cooked argument is that cooked is preferable, and infinitely tastier!

Orange cauliflowers contain 25% more vitamin C than standard caulis. As well as being nutritious, Green Romanesco cauliflowers are visually stunning, and a perfect example of fractals in nature. Purple cauliflowers, if you're lucky enough to be able to find them, are packed with antioxidant anthocyanin compounds. 

Roast Cauliflower - Ingredients - serves 6

  • 3 heads of cauliflower (coloured if available)
  • 1 garlic bulb roasted
  • 2 tbsps melted coconut oil
  • 10 - 15 fresh basil leaves
  • salt and pepper to taste
  • juice of 1 lemon

Instructions

  1. Preheat the oven to 200C (400F gas mark 6)
  2. Chop the basil leaves into small pieces - top tip: place the leaves one on top of the other and roll them up before finely slicing.
  3. In a small bowl mix together the roasted garlic flesh, melted coconut oil, lemon juice, basil and salt and pepper.
  4. Wash the cauliflower, break it into florets and place in a baking dish.
  5. Using a pastry brush - the silicon ones work really well for this I find - brush the garlic oil over the cauliflower florets.
  6. Bake in the oven for approximately 20 minutes or until the cauliflowers are tender and lightly browned.

Serve with what ever you like! We like it with our Bacon Wrapped Pork Fillet.
