Chorizo Winter Squash Casserole - Nutritional Info

Lots of winter vegetables are orange in colour. This is because they contain beta carotene (a form of vitamin A). Now I am not a doctor or nutritionist, but beef and winter vegetable stews are part of our traditional eating habits and I wondered, as I was cooking this dish, whether there was any kind of nutritional benefit of combining these two foods. I had a feeling that vitamin A might help with iron absorption, and it would appear that I am correct, so that's a pretty good reason to indulge in our warming winter squash recipe wouldn't you say?

Paleo Slow Cooker Recipes Ingredients - serves 6

  • 450g beef chunks
  • 1 small chorizo sausage, sliced
  • 2 onions, sliced
  • 6 carrots, cut into sticks
  • 3 sweet potatoes, quartered or cut into eighths
  • 1 winter squash of choice - we used coquina
  • 1 tsp smoked garlic powder or 3 cloves of fresh garlic (smoked if available)
  • 1 tsp smoked paprika
  • 1 tbsp paprika
  • 300 ml beef stock
  • 1 jar of passata (600ml approx) or a couple of cans of chopped tomatoes
  • 1 tbsp tomato puree
  • 3 bay leaves
  • 1 dsp coconut oil
  • 1 tsp crushed mixed peppercorns
  • 1 tbsp lemon juice
  • 1/2 cup of halved stuffed green peppers

To Garnish

  • 1 small red onion
  • 1 tbsp chopped coriander (cilantro)
  • 1 small beetroot spiralized
  • sour cream if you eat dairy


  1. Heat the coconut oil and fry off the onions and brown the beef.
  2. Pour the stock and tomatoes in to the pan and bring up to the boil.
  3. Transfer to the slow cooker and add the rest of the ingredients.
  4. If you are going out for the day, cook on the lowest heat, if you want it done more quickly, cook for 4 - 5 hours on the high setting.
  5. Remove the bay leaves before serving.
  6. Serve with the spiralized beetroot, chopped onion, coriander and, if you eat dairy, sour cream.
