My husband and one of my daughters do not like cinnamon - I know! Sacrilege or what? (To be fair, it could have something to do with them having over egged the pudding by doing the cinnamon challenge the other year! Anyway, they both really enjoyed this casserole, even though they could definitely taste the cinnamon. So if you're thinking *eugh, gross* just give it a chance, I think you'll be pleasantly surprised.

We use chicken thighs in many of our paleo slow cooker recipes as these are both tasty and economical, and are apparently more nutrient rich than chicken breasts.

Chicken thighs are a great source of niacin and an excellent source of selenium, as well as being a great protein provider.

This dish is loaded with sweet potatoes which are rich in Vitamins A (beta carotene (which gives them their orange colour) & C which are both powerful antioxidants - antioxidants are reputed to help in the prevention of a number of significant diseases, not least cancer and cardiovascular disease.

Broccoli, which also features in this dish, is another amazing superfood; providing protein, thiamin, iron, calcium, pantothenic acid, magnesium, phosphorus,  as well as vitamins A, C, K E, B6 along with folate, riboflavin, potassium and manganese.

Chicken Casserole Recipe - Ingredients - Serves 6

  • 8 chicken thighs
  • 2 onions, sliced
  • 8 carrots, julienned
  • 4 large sweet potatoes sliced lengthways
  • 1 head broccoli cut into florets
  • 2 bay leaves
  • 2 cinnamon sticks broken in half
  • 4 apples, peeled, cored and thinly sliced
  • 1/4 tsp pink salt
  • 1/4 tsp crushed black pepper corns
  • 600ml - 1 litre chicken stock (enough to just cover the ingredients)
  • 2 tbsp arrowroot powder mixed with enough cold water to make a paste


  1. Place all the ingredients into the slow cooker and cook on high for 5 - 6 hours.
  2. Just before you are ready to serve, thoroughly stir in the arrowroot powder paste to thicken.
  3. If you are cooking this on the hob put all of the ingredients into a large saucepan.
  4. Gently bring up to simmering point.
  5. Cover and cook for approximately 30 minutes.
  6. Thoroughly stir through the arrowroot powder paste to thicken.
  7. Remove the cinnamon sticks and bay leaves as you serve to prevent unpleasant choking incidents!
