When you have food intolerances or allergies, or even if you just want to change your diet, takeaway meals can become a nightmare; it's often easier to just give them up.
A meal in our favourite Mexican restaurant was a real treat for us, and was often how we celebrated birthdays and other special occasions, but now they just cause too much pain to be a joy. We didn't want to miss out on all the flavours and textures, so we created our very own Paleo Mexican Menu which we are very happy to share with you here!

Don't forget to make extra to keep in your freezer for those nights when you just can't face cooking and are reaching for the real takeaway menu!
Good meals don't have to take a long time to cook, using left over chicken or 'gasp' tinned vegetables, cuts down on the cooking time if you haven't got a stash of ready to go meals in the freezer. Believe it or not it will actually be quicker than dialling for a takeaway!

One of our daughters has an internet friend from Mexico. At the age of 19 she is about to undergo a gallbladder removal operation. Her older siblings and parents have already had this surgery. She suffers from many stomach problems, as it seems, do most of her family and friends. She told our daughter that the vast majority of Mexicans have stomach related health issues and it's not seen as a big deal where she lives.
Our daughter's first thought, as she follows a paleo diet which has cleared up the digestive issues she suffered with, was that it must surely be due to the important roll grains and beans play in the average Mexican diet. It would be interesting to see if there is any data to back up this story.
