Here we have the most decadent of paleo desserts! A 5 layer chocolate trifle recipe that is nut free, gluten free, dairy free BUT utterly delicious! It even makes a proper squelching sound as you scoop out a spoonful! 

Amaze your friends by pulling out this (if we do say so ourselves) spectacular treat. After a night in the fridge it comes out of the dish with the layers perfectly defined.

As ever this is a treat, not something to eat everyday! However, unlike the standard version of a chocolate trifle you would pick up in the supermarket, this one does contain healthy, nutritious ingredients, including vegetables! Yep, you read that right.

We used raw hemp milk for the custard (you can use any other kind of milk if getting hold of hemp seeds is a problem) which is absolutely jam packed full of goodness including omega 3 and 6 fatty acids, all 10 essential amino acids, calcium, potassium, phosphorus, riboflavin, vitamins A, D, E and B12, folic acid, magnesium, iron and zinc.

We've got lots of lovely egg yolks, beetroot, raw cacao powder, gelatine, and coconut milk  in here too, so it's a pretty nutrient filled dessert!

Chocolate Trifle - Ingredients - makes 1 large trifle or 6+ individual trifles

As this chocolate trifle contains 5 layers, there are several steps involved in making it, I can go from start to finish (not including overnight chilling in the fridge) in well under two hours, you might take longer though. So make sure to allow yourself plenty of time and always prepare a day (or even two) ahead of time.  You will probably want to print out the recipes so you have everything to hand, unless you're like me and use your ipad or tablet as a portable cook book!

For the 1st layer:

  • 50g paleo dark chocolate, melted

Paleo Desserts - Chocolate Trifle Recipe - Instructions

  1. Once the cake has cooled, cut out a piece big enough to fit the bottom of your trifle dish. You can use the dish as a template.
  2. Press the cake down into the bottom of the dish (if you're using a glass dish you might want to wipe the sides with some kitchen roll so that the layers are nice and clearly defined).
  3. Spread the melted chocolate over the top of the cake and place in the fridge for 10 minutes to set.
  4. Carefully pour the cooled custard over the top of the chocolate layer and put back into the fridge for at least 10 minutes, longer would be better, but it will still work if can't spare any extra time.
  5. Very carefully put the mousse on top of the custard a spoonful at a time. It will probably drop down into the custard a little bit, but don't worry, this is fine. Cover the custard with the mousse and then carefully spread it out using the back of a spoon. 
  6. Put the trifle back into the fridge for at least 10 minutes.
  7. Using a piping bag, pipe the coconut cream over the top of the mousse. Again, it might drop into the mousse a little, so don't panic!
  8. Sprinkle the grated chocolate over the top of the coconut cream and leave in the fridge overnight to completely set.
  9. Enjoy!

The eagle eyed amongst you might have noticed that the picture at the top has the custard layer in a different place to the second picture of the trifle. We found that sandwiching the custard between the cake and the mousse made it easier to add the coconut cream, and it also made getting the trifle out in clearly defined layers work better.
