This custard can be made with pretty much any kind of milk. We used raw, home made hemp milk in this version, as we didn't want a coconutty flavour coming through. We understand that in some parts of the world hemp seeds are not available (!) to buy so if this is the case substitute your milk of choice.

We used raw hemp milk for the custard (you can use any other kind of milk if getting hold of hemp seeds is a problem) which is absolutely jam packed full of goodness including omega 3 and 6 fatty acids, all 10 essential amino acids, calcium, potassium, phosphorus, riboflavin, vitamins A, D, E and B12, folic acid, magnesium, iron and zinc.

The custard uses lots of egg yolks which provide lots of good stuff including vitamins A, D, E, B6 and B12 along with iron, thiamin, riboflavin, folate, pantothenic acid, calcium, phosphorus, selenium and much much more!

Raw cacao powder packs in lots of lovely magnesium which we are all allegedly deficient in these days along with antioxidants and 'feel good chemicals'.

Paleo Desserts - Chocolate Custard Recipe - Ingredients

  •  400 ml hemp milk
  •  10 g cacao butter (optional)
  •  3 tbsp cacao powder
  •  1.5  tbsp honey
  •  pinch of pink salt
  • 1 tsp vanilla extract
  • 6 - 8 egg yolks (this will depend on the size of your eggs, try using 6 first and if the custard isn't thickening after 15 mins of cooking, add a couple more)

Instructions

  1. Place the hemp milk, cacao butter, honey, vanilla and salt into a glass bowl.
  2. Heat gently over a pan of hot water, whisking gently. If you are using hemp milk it may look at bit odd don't worry, it will come together after the eggs have been added.
  3. Sprinkle the cacao powder onto the liquid and whisk until well combined.
  4. Continue to heat for a couple of minutes until hand hot.
  5. Whisk the egg yolks in a bowl.
  6. Carefully add a small ladle of the hot milk mixture to the egg yolks, whisking as you do.
  7. Repeat this process until you have half of the milk liquid added to the eggs.
  8. Slowly, whilst whisking, pour the egg and milk mixture back into the glass bowl.
  9. Whisk and continue to heat until thickened (10 - 15 minutes).
  10. Serve hot over a slice of cake, or cool over a large bowl of cold water if using in our trifle.
