Kohlrabi Recipe for Kohlslaw

This kohlrabi recipe for kohlslaw (did you see what I did there...?) is lovely and crunchy, and is a great way of using up your home grown veggies.

My son loves this coleslaw recipe, which surprised me as ordinarily he will do anything to avoid eating coleslaw.

I suspect that the naturally sweeter kohl rabi is more appetising to his palate than the cabbage which usually features in most recipes. 

It goes great with picnic foods like our spicy samosas and even with a big old bowl of scrambled eggs - I had that very thing for my breakfast!

Make it totally paleo by using home made mayonnaise - I've not been brave enough to try making this yet, haunted as I am by the voice of Edwina Curry (or Eggwina as she was nicknamed by the British tabloids) warning about the risks of eating raw eggs.

Kohl rabi is a good source of thiamin, folate, magnesium and phosphorus, and a very good source of Vitamin C, B6, potassium, copper and manganese.

Carrots are full of Vitamin A in the form of beta carotene, as well as being a good source of Vitamins C, K and B6, along with trace elements such as thiamin, folate, niacin, manganese and potassium.

If you can find quality pepperoni or chorizo do use that, we rarely eat processed meats, so this is a guilty pleasure from time to time.

Kohlslaw - Ingredients - serves 4 - 6

  • 1 kohlrabi
  • 6 carrots
  • 6 pieces of chorizo or pepperoni thinly sliced
  • 1 - 2 tbsps mayonnaise 
  • salt and pepper to taste.

Instructions

This recipes makes a great coleslaw with or without the addition of the pepperoni or chorizo. If you do use the meat you can either cook it or slice it straight from the packet.

  1. If you are cooking the pepperoni or chorizo, place it under the grill for a couple of minutes, then leave to cool.
  2. Once cool cut into thin slices.
  3. Peel the kohlrabi and cut it into quarters, it might have a rather tough 'core' if so, cut it out and then grate the rest of the kohlrabi into a large bowl.
  4. Peel and grate the carrots and add to the bowl with the kohlrabi.
  5. Stir through the slices of meat.
  6. Add a tablespoon of mayonnaise to the mixture and mix well, adding more to suit your taste.
  7. Season and serve.
