Gluten Free Apple Cake Recipe - from our Paleo Desserts Collection

This Gluten Free Apple Cake recipe was born after a disappointing trip to the free from section of the local supermarket! There was a divine looking dutch apple cake sat on the shelf, but unfortunately it wasn't gluten free - who knew that the free from section can mean free from nuts or dairy but not necessarily gluten? Not me!

To be truthful it's not a section we frequent very often as I prefer to make our own food instead of relying on packaged stuff, but this particular day we were all hungry after an early start to watch The Boy take part in his Taekwondo grading. I got chatting to a lady who had been diagnosed coeliac for 5 years, it surprised me that she still bought this stuff as part of her regular diet, and made me realise just how unusual we are really. Anyway, on with the cake...

Here is the complete loaf in all its glory - you can see the band of apple sauce in the middle.

Unfortunately baked apples aren't as good for you as the raw ones, but you will still get amount of their antioxidant goodness when they are cooked. As we all know, cakes shouldn't be an every day part of a healthy diet of any kind let alone a paleo diet, but if you're going to eat cake, then this one isn't such a bad one to go for as it is obviously free of grains, as well as having a very low sugar load.

Apple Cake - Ingredients - (gives a good 8 slices)

For the cake

  • 65 g tapioca flour
  • 65 g coconut flour
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 50 g coconut sugar
  • 1/4 coconut oil
  • 3 cooking apples
  • 1/4 tsp bicarbonate of soda
  • 6 eggs
  • pinch of salt

For the sauce

  • 2 cooking apples
  • 3 dsp coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • squeeze of lemon juice

Gluten Free Apple Cake - Instructions 

First prepare the apple sauce: 

  1. peel and chop the apples and place in a saucepan with the rest of the ingredients.
  2. Gently cook until the apples are very soft but still just about holding their shape.
  3. Leave to cool.

Now prepare the cake: 

  1. Preheat the oven to 180C (356F)
  2. Place the coconut oil in an oven proof container, place in the oven as it warms up, to melt.
  3. Peel and grate the apples.
  4. In a bowl add the grated apples and all the dry ingredients together, mix well.
  5. In a separate bowl add the eggs and coconut oil, whisk with an electric whisk until well intergrated.
  6. Add the wet ingredients to the dry and stir well.
  7. Place half the cake mixture in the bottom of a loaf tin (a silicon one will make life a lot easier)
  8. Carefully spread the apple sauce on top of the bottom layer
  9. Spread the remaining mixture over the apple sauce.
  10. Bake for 30 mins then check to see if it's cooked by carefully inserting a skewer into the middle of the cake - if it comes out clean it's done, if not pop it back into the oven and keep a watchful eye on it.

Leave to cool for a while before attempting to remove it from the tin. Slice and serve with cream if you eat it, or custard (a dairy free version can be found here.
