This Gluten Free Apple Cake recipe was born after a disappointing trip to the free from section of the local supermarket! There was a divine looking dutch apple cake sat on the shelf, but unfortunately it wasn't gluten free - who knew that the free from section can mean free from nuts or dairy but not necessarily gluten? Not me!
To be truthful it's not a section we frequent very often as I prefer to make our own food instead of relying on packaged stuff, but this particular day we were all hungry after an early start to watch The Boy take part in his Taekwondo grading. I got chatting to a lady who had been diagnosed coeliac for 5 years, it surprised me that she still bought this stuff as part of her regular diet, and made me realise just how unusual we are really. Anyway, on with the cake...
Here is the complete loaf in all its glory - you can see the band of apple sauce in the middle.
Unfortunately baked apples aren't as good for you as the raw ones, but you will still get amount of their antioxidant goodness when they are cooked. As we all know, cakes shouldn't be an every day part of a healthy diet of any kind let alone a paleo diet, but if you're going to eat cake, then this one isn't such a bad one to go for as it is obviously free of grains, as well as having a very low sugar load.

Leave to cool for a while before attempting to remove it from the tin. Slice and serve with cream if you eat it, or custard (a dairy free version can be found here.
