Egg Recipes - Chilli Poached Eggs

Chilli Poached Eggs - Nutritional Info

This recipe contains bell peppers which are a good source of niacin, thiamin, folate, magnesium and copper, and a very good source of vitamins A, C, K and B6 as well as manganese and potassium.

Eggs are fantastic protein providers as well as containing good quantities of riboflavin, B12, phosphorus and selenium

Tomatoes provide vitamins A, C, E and K, and a wealth of trace elements such as magnesium, potassium, iron and copper.

Spinach is considered to be strongly anti inflammatory, is a great source of protein and a very  long list of vitamins, minerals and trace elements.

Chilli Eggs - Ingredients 

  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 1 tsp coconut oil
  • 1 frozen portion of spinach per person (or use a handful of fresh)
  • 2 - 3 eggs per person
  • 2 cartons of chopped tomatoes
  • pinch of oregano
  • 1/2 tsp ground cumin
  • pinch of salt
  • 1 fresh chilli or 1 tsp chilli powder (or to taste)
  • 1 tbsp tomato puree

Instructions

  1. Heat the coconut oil in a pan and gently fry the peppers and onions until soft.
  2. Stir in the spices and fry for about a minute to release the flavours.
  3. Pour in the tomatoes and add the spinach, oregano, salt and tomato puree. 
  4. Simmer gently until the spinach has defrosted and can be broken up with a spoon.
  5. Break the eggs carefully onto the the tomato mixture.
  6. Cover the pan with a lid, reduce the heat to low and very gently simmer for approximately 15 minutes, or until the eggs are cooked to your liking.
  7. Serve with cauliflower rice.
