Ok so this is an egg fried rice recipe with a difference... there's no rice! The rice has been replaced with cauliflower so it is suitable for a paleo diet as well as being great for those following a gluten free diet. Plain cauliflower rice is delicious, but turning it into egg fried rice adds some extra nutritional bulk as well as tasting fabulous.
Cauliflower can be a bit hit or miss, especially if it's just been steamed or boiled. You really need to get creative with it as it is SUCH a great vegetable health wise.
From the Cruciferous vegetable family, cauliflowers are incredibly good for us being packed with vitamin C and other goodies; plus they are known to have several anti cancer properties as well as being good for heart health.
Cruciferous vegetables contain goitrogens which can interfere with thyroid hormone production, so there is some debate as to the wisdom of eating them raw. My personal opinion on the raw vs cooked argument is that cooked is preferable, and infinitely tastier!
