Easy Hummus Recipe

I took inspiration for this easy hummus recipe from TGIPaleo's hummus recipe. It is utterly delicious, and will definitely become a family favourite here.

We have really missed the garlicky yumminess of hummus since we started a paleo diet a few years ago. This absolutely hits the spot - my children thought they'd died and gone to heaven when they tasted it! Hope you enjoy it as much as us, and massive thanks to TGIPaleo for the inspiration.

Gluten Free Hummus - Easy Hummus Recipe

This dip is absolutely packed full of goodness and taste.

The thing that makes this hummus paleo is that it is made with sweet potatoes instead of chickpeas. Sweet potatoes are little powerhouses of goodness - High in vitamin A which takes the form of beta carotene (the compound that gives orange vegetables their colour); vitamin C; Vitamin B6 and potassium and of course they are just plain tasty.

Of course dunking vitamin and mineral charged veggies into a dollop of this scrummy dip is going to be extra good for you, and a great way to encourage kids to eat their veggies!

Ingredients (serves 6 - 8)

  • 2 medium - large sweet potatoes
  • juice of 1 lemon
  • 3 cloves garlic
  • 1/2 cup sesame seeds ground (or use tahini if you have it, we didn't)
  • 1 tbsp tomato puree 
  • 1/4 cup olive oil
  • 1/4 water
  • salt and pepper to taste
  • 1/2 cup olives (we used black, but green pimento stuffed ones would be awesome!)
  • pinch cayenne

Method

  1. Preheat the oven to 200C and pop your sweet potatoes into roast until nice and soft.
  2. Leave to cool then scoop out all the flesh.
  3. Grind your sesame seeds.
  4. Place all the ingredients in a blender and blitz until smooth. Add more water if necessary until you reach your required thickness.
  5. Chill (if you can wait that long, we actually ate this whilst it was still warm as we couldn't wait for the sweet potatoes to cool!) and serve with a selection of crunchy vegetables.
