Coconut Macaroon Recipe - Nutritional Info

You know the dessert drill! These are treats, and are not to be consumed on a regular basis! 

These little balls of fluff pack a sweet punch so these will be something that you will want to share with friends, they are guaranteed to love you for it!

These are gluten free, and refined sugar free, but still pack a heavy sweet punch with the honey.

At a push you could pretend that you're getting some vitamin C in the form of the lime juice, protein from the egg whites, oh and magnesium from the chocolate... but let's not kid ourselves here! 


It's ok to treat yourself from time to time and if you're going to have a naughty but nice treat, you might as well make it as healthy as you can by cutting out the wheat and white sugar.

coconut macaroon recipe - Ingredients - makes 24

For the lime macaroons

  • juice and zest of 1 lime (omit for plain macaroons)
  • 6 egg whites
  • honey - make up to 1/2 cup with the lime juice (full 1/2 cup if not using lime juice)
  • 3 cups of shredded coconut

For the chocolate splatters

  • 50g cocoa or raw cacao butter
  • 60g cocoa or raw cacao powder
  • 3 tbsp honey

Instructions

  1. Preheat the oven to 180C/350F/gas mark 4
  2. In a large bowl whisk the egg whites until they form stiff peaks (an electric whisk makes easy work of this)
  3. Zest the lime and add it to the egg whites.
  4. Juice the lime and add the liquid to a measuring cup.
  5. Add enough honey to the lime juice to make it up to 1/2 cup of liquid.
  6. Measure out the shredded coconut and add to the eggs whites.
  7. Pour the honey and lime juice into the bowl with the egg whites and coconut and carefully fold in.
  8. Line a baking sheet with baking parchment (or alternatively use a silicon baking tray)Drop a teaspoon full of mixture onto the baking tray - if you want your macaroons to be a perfect shape them gently shape them with your fingers.
  9. Bake for 8 - 10 minutes until the macaroon are a light golden colour.

If you want to add chocolate now is the time to make it!

  1. Gently melt the cocoa/cacao butter in a bowl over a pan of water (do not allow any water to come into contact with the chocolate otherwise it will spoil and you will have to start again.)
  2. Once melted, remove from the heat and whisk in the cocoa/cacao powder until smooth.
  3. Add the honey and quickly whisk again until smooth.
  4. Drizzle the melted chocolate over the tops of the macaroons.
  5. Leave to set before serving with a lovely cup of tea - early grey would go well.
