Coconut frosting is awesome! You can add any flavour that you fancy to it to turn a pretty good cake into a mouth watering treat of epic proportions. Is that over doing it? I honestly don't think so!

We made a chocolate orange frosting and topped our chocolate mousse cake with it. OMG! Seriously, manna from heaven!

It is such a quick and simple thing to make that you can literally whip up a batch in minutes!

But this is a treat food, a once in a blue moon delight, ok it's better for you than the usual gunk, but you still can't go and eat a bucket load of it, or shovel it down on a regular basis without paying the consequences! Consider yourself warned, because you are totally going to want to do these things when you try it!

Coconut Frosting and variations - Ingredients 

For a plain coconut frosting which you can also use as a base for our other flavours

  • 200g melted creamed coconut 
  • 4 tbsp honey or maple syrup according to personal preference
  • 4 tbsp melted coconut oil (only use 2 tbsp if making the chocolate flavoured frosting)


For a simple but delicious Chocolate Frosting

  • add 2 tsp vanilla extract
  • 2 tbsps melted cacoa butter
  • 2 tbsps cacao powder


For our delicious chocolate orange frosting you will also need:

  • zest of 1 orange
  • 5 drops orange essential oil or 1 tsp orange flavouring


For mouthwatering Chocolate Mint Frosting

  • omit the orange zest
  • replace the orange oil with 5 drops of peppermint essential oil or 1 tsp mint flavouring


Instructions

  1. If your coconut oil and creamed coconut isn't already in a liquid state then you will need to melt it.  The best way to do this, in my opinion, is to put it in a glass bowl over a pan of hot water - you don't want the water to come more than a third of a way up the bowl otherwise you will get water into the mixture. If you are making one of the chocolate frostings you will also need to add in the cacoa butter at this point.
  2. Once melted whisk in the honey or maple syrup.
  3. If you are making a flavoured frosting whisk in the other ingredients, but if you are using essential oil, leave the frosting to cool before adding it otherwise you will lose a lot of the flavour.
  4. Chill for 5 - 10 minutes in the fridge before using to decorate your cake. If you leave it in the fridge too long you will need to let it come to room temperature before using.


If you want to turn the frosting into fudge, spoon it into mini cake bar moulds and freeze, then cut into bite sized chunks. Store in the freezer.

NB Sometimes you might find that the mixture seems to almost curdle, and won't form the right consistency. If this happens, slowly whisk in some more honey, and whisk until the frosting is a smooth, silky texture.
