Cauliflower Rice

Cauliflower rice is the base of our delicious kedgeree recipe seen here. 

For anyone following a low carb or grain free diet, cauliflower is the perfect replacement for rice and potatoes.

When you initially transition to a paleo diet it can seem as if all your favourite foods are a thing of the past, but you just need to get inventive.

We are not big fans of boiled cauliflower on its own, but when it is incorporated into other dishes my children will wolf it down, and actually ask for seconds! 

Cauliflower Rice - Nutritional Info

From the Cruciferous vegetable family, cauliflowers are incredibly good for us being packed with vitamin C and other goodies; plus they are known to have several anti cancer properties as well as being good for heart health.

Cruciferous vegetables contain goitrogens which can interfere with thyroid hormone production, so there is some debate as to the wisdom of eating them raw. My personal opinion on the raw vs cooked argument is that cooked is preferable, and infinitely tastier!

Orange cauliflowers contain 25% more vitamin C  than standard caulis. As well as being nutritious, Romanesco cauliflowers are visually stunning, and a perfect example of fractals in nature.


  • cauliflower - one large cauliflower will generally yield enough to serve 2 or 3 people
  • one or two onions according to preference
  • 1 dsp coconut oil
  • salt and pepper to taste
  • 1/4 cup water
  • 1 tsp turmeric (optional)


  1. Wash and destalk the cauliflower then chop up into rice sized pieces. You could do this with a grater but a food processor is easier.
  2. Chop the onion.
  3. Heat the coconut oil in a frying pan.
  4. Gently fry the onion until it starts to soften.
  5. Add the turmeric, if using, and fry off for 30 seconds
  6. Throw in the cauliflower and fry for 5 minutes.
  7. Add the water, cover and steam until tender.
