Chicken Burger Recipe

This is a really versatile and easy chicken burger recipe. I had a hungry hoard to feed and only four small chicken breasts. I needed a way to make that chicken go further, plus I needed an excuse to have a play with my new kitchen gadget - a meat mincer.


The result was a really tasty burger that will definitely become a firm family favourite here. As always it's suitable for anyone on a gluten free diet being one of our pure paleo recipes.

Chicken is packed full of protein and amino acids that help the body grow and repair itself, it contains calcium, magnesium, phosphorous, potassium, niacin and vitamins B12 and A. As well as being a really versatile and tasty ingredient!

This chicken burger has a couple of secret ingredients to make it extra delicious and nutritious.  Perhaps you can guess what they are by looking at the picture... A favourite paleo ingredient.... yep, bacon is one of the secret ingredients in this dish, mostly because I had a packet lurking at the back of the fridge and I figured it would help me make the chicken go further. All the family agree that it worked really well and they would have gone back for seconds, if there had been any!


Ingredients (makes 8 burgers)

  • 4 small chicken breasts
  • 6 rashers of bacon (we used smoked - the nitrate free stuff from Devon Rose is out of this world and if you're in the UK you can get 10% off your first order with code TW10RTD )
  • 1 onion
  • 1 carrot
  • 1 egg
  • 1/2 tsp tarragon or chives
  • 1 portion of magic wonder dough - makes 6 baps
  • 1 cup sesame seeds (optional)

Instructions

  1. Preheat the oven to 200°C / 400°F / Gas Mark 6
  2. Cut the chicken into chunks and put through a meat mincer (you could use a food processor too I would imagine). I used the fine blade, but a coarser blade would maybe work a bit better as the chicken was quite mushy by the time it had gone through the grinder.
  3. Put the bacon rashers  through the grinder.
  4. Cut the carrot and onion into chunks and push through the grinder (this will help to get all of the meat out of the mincer).
  5. Add a beaten egg and the tarragon to the meat and vegetable mixture.
  6. Combine well.
  7. Make your burger patties by taking a large spoonful of mixture and placing it on a greased baking tray.
  8. Shape by pressing down to the required size with your hand or the back of a spoon.
  9. Spread the sesame seeds on a plate and press both sides of the burger into them to give them a crunchy crust (optional).
  10. Bake for 20 - 25 mins, checking that the internal temperature has reached 74°C/165°F .
  11. Serve with sweet potato chips, steamed broccoli, a crunchy salad and maybe some spicy patatas bravas.
